Hello Kevin. What is the difference between buen día and buenos días? or can I use both interchangeably?

And I assumed that if the first letter after y (and) is "i", I should use e instead of y. is it correct?

¡Hola, Mega!

When it comes to greetings in Spanish, buenos días is the only expression used in Spain. However, Latin Americans vary this structure by pluralizing it: buenos días.

In the end, you are free to choose the one you feel more comfortable with. Both are grammatically correct, and both are accepted by use.

Have a good day!
